The Coratina cultivar is one of the oldest and longest-lived varieties cultivated in Apulia. Among the many nutritional properties of this cultivar, the high content of polyphenols deserves special mention. These polyphenols are able to perform an antioxidant action, which is essential to fight free radicals, prevent cellular ageing and reduce the risk of cancer. It is precisely the antioxidant power conferred by the high polyphenol content that allows 100% Coratina oil to preserve its organoleptic properties for longer, defending itself against one of the main enemies in oil conservation: oxygen.

Organoleptic properties: the main immediately perceptible characteristics are the spicy and bitter but balanced taste that make for a unique sensory experience. From an olfactory point of view, it has hints of freshly cut grass, artichoke and green tomato.
